So, I have found a 96 3100 for my 95 Grand Prix (haven't bought it yet) and was told that not only would I have to swap the plenum for the EGR valve, but the temp sensor wiring is also different, so what would it take to change the single '96 temp sensor to the double '95 temp sensors?

It's easier to change your double to a single sensor.
Use the 96 3-wire temp sensor in the new motor. Wire in your single green wire from the old sensor in the rear head to the 3-wire sensor in the lower intake.

well, I did find a 95 3100 out of another GP, it's going to cost me more, but less headaches that way.
