I have a 91 lumania z34 and it truns off on me if i shift it out of gear so i have to keep my foot on the gas in order to keep it runing if it turns off on me i just trun it back on and it does

this is the wrong section unless you want to pay for us to diagnose the issue.
but there are a LOT of things that can cause what you're describing. do any codes show up?

do you know what the IAC is? try unplugging it when the car is running, if its working correctly, the idle should raise to about 2500/3000 RPM. then plug it back in, and the idle should go back to normal. if not, that might be your problem

It's the metal sensor that sticks out about and inch on the fire wall side of the engine. It should have a 90 degree plug, its black and the are 2 star bit screws that hold it in the throttle body. At least that where it is if it's 3100, 3400. I'm not familiar with any of the larger engines. cept the 38001998 Chevy M VIN Mali LS with 99 Olds J VIN 3100 Swap
